Sausage and Lentil Soup
Sliced kielbasa, green lentils, and vegetables simmered in broth until thick and filling.
Heat oil in a large pot over medium-high heat. Add the sausage slices and brown on both sides — about 4 minutes. Remove and set aside.
Add onion and carrot to the same pot. Cook 5 minutes until softened.
Add garlic, smoked paprika, and thyme. Cook 1 minute.
Add the lentils, diced tomatoes, broth, and water. Stir well.
Bring to a boil. Reduce heat to a gentle simmer. Cook uncovered 30 minutes until lentils are tender.
Return the browned sausage to the pot and stir to combine.
Simmer 5 more minutes. Taste and adjust salt — the sausage is already salty, so hold back at first.
Serve as-is. The soup thickens considerably as it cools.

- Green lentils do not need soaking — rinse and add them dry. They cook in about 30 minutes in simmering broth.
