  • 375 g Pillers kolbassa sausage, sliced into rounds $6.50
  • 200 g green lentils, dry $0.84
  • 1 can (796 mL) diced tomatoes $2.00
  • 2 medium carrots, diced $0.59
  • 1 medium yellow onion, diced $1.23
  • 3 cloves garlic, minced $0.24
  • 1 can (900 mL) chicken broth $1.50

Instructions

  1. Heat oil in a large pot over medium-high heat. Add the sausage slices and brown on both sides — about 4 minutes. Remove and set aside.
  2. Add onion and carrot to the same pot. Cook 5 minutes until softened.
  3. Add garlic, smoked paprika, and thyme. Cook 1 minute.
  4. Add the lentils, diced tomatoes, broth, and water. Stir well.
  5. Bring to a boil. Reduce heat to a gentle simmer. Cook uncovered 30 minutes until lentils are tender.
  6. Return the browned sausage to the pot and stir to combine.
  7. Simmer 5 more minutes. Taste and adjust salt — the sausage is already salty, so hold back at first.
  8. Serve as-is. The soup thickens considerably as it cools.
