Peanut Butter Banana Overnight Oats
Oats soaked overnight with peanut butter, banana, and milk. No cooking.
Divide the oats among four jars or bowls or use one large container.
Add the peanut butter, syrup, and cinnamon, then pour in the milk. Stir well until the peanut butter loosens and everything is combined.
Fold in the mashed banana, saving a few slices for topping if you like.
Cover and refrigerate overnight, or at least 4 hours.
In the morning, stir and loosen with a splash more milk if it is too thick. Top with the reserved banana and serve cold, or warm through in the microwave.
Make all four the night before; they keep for 3 days in the fridge.
- Overripe bananas are cheaper (or free from the discount rack) and mash better.
- Water or the cheapest milk both work if you are stretching the budget.
