Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add the ground turkey. Break it up with a spoon and cook 6–8 minutes until cooked through and lightly browned. Remove and set aside.
  3. In the same pot over medium heat, add the onion and carrots. Cook 5 minutes until softened.
  4. Add the garlic, thyme, and paprika. Cook 1 minute.
  5. Return the turkey to the pot. Add the potatoes, diced tomatoes, white beans, and chicken broth.
  6. Bring to a boil, then reduce heat to low. Simmer covered for 20 minutes until the potatoes are tender.
  7. Remove the lid and simmer another 5–10 minutes to thicken slightly.
  8. Taste and adjust salt and pepper. Serve hot.
