Ground Turkey and Vegetable Stew
A hearty stew with ground turkey, potatoes, white beans, and canned tomatoes. High protein and fills well.

- 2 large carrots, diced $0.59
- 1 large onion, diced $1.23

- 1 tsp dried thyme $0.05

Instructions
- Heat oil in a large pot over medium-high heat.
- Add the ground turkey. Break it up with a spoon and cook 6–8 minutes until cooked through and lightly browned. Remove and set aside.
- In the same pot over medium heat, add the onion and carrots. Cook 5 minutes until softened.
- Add the garlic, thyme, and paprika. Cook 1 minute.
- Return the turkey to the pot. Add the potatoes, diced tomatoes, white beans, and chicken broth.
- Bring to a boil, then reduce heat to low. Simmer covered for 20 minutes until the potatoes are tender.
- Remove the lid and simmer another 5–10 minutes to thicken slightly.
- Taste and adjust salt and pepper. Serve hot.
