THE METHOD

Cook the rice according to package directions and set aside.

Heat the oil in a large skillet over medium heat. Add the onion and cook 4–5 minutes until softened.

Add the garlic, chili powder, cumin, and paprika. Stir for 30 seconds until fragrant.

Pour in the diced tomatoes with their juice. Add the black beans, kidney beans, and corn.

Simmer uncovered over medium-low heat for 10 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper.

Divide the rice among four bowls and spoon the bean mixture over top.

Scatter the green onions over each bowl and serve.
