Instructions

  1. Heat oil in a large pot over medium-high heat. Add sausage slices and brown 3 minutes per side. Remove and set aside.
  2. Add onion to the same pot. Cook 5 minutes until softened.
  3. Add garlic, tomato paste, mustard, and smoked paprika. Cook 1 minute.
  4. Add diced tomatoes and brown sugar. Stir to combine.
  5. Add the beans. Stir everything together.
  6. Return the sausage to the pot. Bring to a simmer.
  7. Cook uncovered over medium-low heat 25 minutes, stirring occasionally, until the sauce has thickened.
  8. Taste and adjust seasoning — the sausage is salty, so add salt carefully. Serve with bread or over rice.

Budget Notes

  • Two cans of beans is not an error. One can disappears into the sauce. Two cans makes this a proper meal with enough volume to feed four adults.
  • Brown sugar and mustard are what make this taste like baked beans. Neither is expensive and both are pantry staples that last forever.
  • Serve with No Name white bread at $2.48 to stretch it further. Not included in the budget.
